The 20th Century Fox confirmed today that Joy will be coming on Ultra HD Blu-ray on the same day as it will be available on Blu-ray, May 3rd.
Quick note to add that the soundtrack will be DTS Master Audio 5.1, no object audio on this release, which is totally understandable.
The 20th Century Fox announced that The Revenant will be available both on Blu-ray and Ultra HD Blu-ray on April 19th.
Sadly, the press release mention only DTS Master Audio 7.1 for both discs, so it seems Dolby Atmos has been left out.

Recent pictures of the movie that made it to retailers now confirms that Peanuts will be the first movie coming from the 20th Century Fox to features a Dolby Atmos soundtrack.
As stated by Fox before, this will be reserved only for the UltraHD Blu-ray edition on the movie, as not even the Blu-ray in the same box will offer Dolby Atmos.

Quick note to let you know that some Fox UHD Blu-rays are now in the hands of consumers thanks to Fox Connect and none of them (Martian included) contains a Dolby Atmos soundtrack.
This is really bad news coming from Fox and a really disservice to the format launch sadly. I hope they will fix this on future releases.
According to Amazon and Blu-ray.com, it seems that March 1st is the release date for the first group of Fox UltraHD Blu-ray titles. As already reported the titles are :
No detail on technical specs yet including audio formats, but we shall know soon enough.
The 20th Century Fox just confirmed than they plan to release all of their new movies on home video to the 4K UltraHD Blu-ray format at the same time as the regular Blu-ray edition.
The first title to be released will be Kingsman : The Secret Service which offers us a first glimpse at the look of the boxes for this new physical format. As you can see, the title will also include Blu-ray and Digital Download, but no DVD copy. Which is good news in my mind as the format should start disappearing and we should stop paying for an unwanted disc. Talking about prices, they said the new titles should have an MRSP around 30 US dollars, not surprising for a new format.
No word yet on the technical details of the disc, the main question being if Fox will start working with Dolby Atmos or DTS:X as the movie was shown in cinema in Atmos.
Finally, Fox also confirmed other titles that will be also available on UltraHD Blu-ray soon after launch: Exodus: Gods and Kings, Fantastic Four, X-Men: Days of Future Past, Life of Pi, The Maze Runner and Wild.
